Burns' Night Dinner Party

On Tuesday January 25th, I prepared a three course dinner to celebrate Burns Night. We have some Scottish blood in our family, from the Sinclair clan, and Burns Night is something we always celebrate in our household, and this year I wanted to prepare my own dinner this year. 

In terms of guests, my parents were at home already and my middle sister has recently moved back in with us, making us a family of four. I also invited our good friend, Stuart, who is Scottish and we thought he would enjoy the evening too. My boyfriend was invited as well, but didn't come in the end. I still had enough food for him if he changed his mind, but unfortunately still couldn't make it. 

The menu that I chose was a fairly simple one, and easy to prep whilst I was working from home, and I thought it embraced Scottish culture quite nicely as well. 

For starters, I prepared a smoked salmon pâté with lemon & dill. I have never made pâté before and I was quite surprised at how easy it was! Very few ingredients and very easy to make with a food processor! The recipe I used came from the BBC Good Food website. It went down well with my parents and I knew my sister didn't like fish, so I bought her some Brussels Pâté instead. I go to serve the started plates up and Stuart says he doesn't like smoked salmon haha! It was lucky I had a different pâté to serve!

For the main course, I served Balmoral Chicken - chicken breast stuffed with haggis and then wrapped in bacon - with tender stem broccoli, carrots, sautéed potatoes, and a tablespoon of mashed needs & tatties.

After a rest, a Gin and Irn Bro, and a discussion about the upcoming England vs. Scotland Six Nations game, I served my Cranachan, which I had dished up in wine glasses to make the presentation a bit fancier!

We finished off the evening with a glass of Glenturret whiskey, and a bottle of Glayva between us and more chatting, laughing and giggling. I'm pretty sure everyone enjoyed their meals as all plates were empty! 

I did all the cooking and preparations myself, with a small bit of help from Mum, who stirred the whiskey sauce whilst I dished everything up. My parents and my Sister laid the table for me, as - even though the majority of food was cooked - I ran out of time and had to get changed as Stuart arrived. Mum realised that we didn't leave any haggis for Stuart - being the token Scotsman - to address, so she crocheted one for us!

Everything went really well and I'm really pleased and grateful for my parents, Sister and Stuart for helping me make the evening special. Thank you guys!
